About molds and mycotoxins

As weather conditions in Japan are perfect for the growth of mold, the country has a long history of using mold for human purposes such as the production of miso and soy sauce.
At the same time, however, frequent complaints are made to the Tokyo Metropolitan Government Public Health Centers concerning food spoilage from mold.
In addition, as the number of imported foods grows, more attention is being paid to the problem of the mycotoxins produced by mold such as aflatoxin.
