Wallemia

A xerophilic fungus.  It often appears on foods with high sugar concentrations, such as chocolate, sponge cake, yokan (Japanese confectionery), and dried persimmon fruits.  A large amount of Wallemia is also found in dust, carpets, and the surface materials of tatami mats.  It forms small chocolate-colored colonies with diameters of 2-3 mm.  It does not produce mycotoxins.
